Similar to running, baking is therapeutic for me – I don’t listen to music or anything – I just tune out the world. Here’s one of my favorite recipes.

INGREDIENTS

3 cups almond flour
1 tsp. baking soda, gluten-free
¼ tsp. sea salt or Himalayan salt
¼ cup extra-virgin organic coconut oil, melted
¼ cup pur maple syrup (or raw honey)
1 large egg
2 large egg whites (1/4 cup)
1 tsp. pure vanilla extract
½ cup semi-sweet (or dark) chocolate chips

DIRECTIONS

1ļøāƒ£ Preheat oven to 375F
2ļøāƒ£ Line 2 baking sheets with parchment paper. Set aside.
3ļøāƒ£ Combine almond flour, baking soda & salt in a medium bowl; mix well. Set aside.
4ļøāƒ£ Beat oil and maple syrup in a large mixer bowl until creamy, approximately 4-5min.
5ļøāƒ£ Add egg, egg whites & extract; beat for an additional 2min.
6ļøāƒ£ Add almond flour mixture to egg mixture; mix until blended.
7ļøāƒ£ Add chocolate chips; mix until just blended.
8ļøāƒ£ Drop by rounded Tbsp. onto prepared baking sheets. Flatten cookies with a spatula if traditional cookie appearance is desired. Bake for 14-16min, or until golden brown.
9ļøāƒ£ Store in airtight container.
